Egg-Tomato Bake

Ingredients: 3 large tomatoes, 1 tbsp. coconut oil, sea salt, 1 clove garlic, 3 eggs.

Makes 3 baked tomatoes.

 

  1. Pre-heat oven to 400 degrees
  2. Slice the top of the tomato off and use a spoon to scoop out the inside of the tomato leaving it hollow.
  3. Place the tomatoes in a clear glass baking dish (fill with 1 inch of water so the tomatoes don’t stick).
  4. Drizzle with coconut oil, sea salt, pepper, chopped garlic + any additional seasonings (I like cayenne!)
  5. Roast tomatoes for about 30 minutes.
  6. Crack an egg into each tomato and bake for an additional 8-10 minutes.
