I used to make this recipe all the time but it hasn’t come back into my life for a few years now.
I was so happy with how this turned out and plan on making it a weekly staple now. It’s super easy and makes 4 peppers which is enough to feed 4 people.
Ingredients:
- 2 green bell peppers, 2 yellow peppers, tops removed, seeded
- 1 pound ground turkey
- 2 tablespoons coconut oil
- 1/2 onion, chopped
- 2 tomatoes, chopped
- 1/2 cup quinoa, cooked
- 4 oz. raw cheese
- 1 cup fresh spinach
- 1 tbsp. minced garlic
- Italian seasoning to taste
- Sea salt and pepper to taste
- Optional: 1 avocado
- Optional: Salsa
Directions:
1. Preheat oven to 350 degrees. Wrap the peppers in aluminum foil, and place in a baking dish. Bake 15 minutes in the preheated oven. Remove from heat and set aside.
2. In a stovetop pan over medium heat, cook the turkey until evenly brown.
3. In a separate stovetop pan, heat the oil and cook onion, tomatoes, garlic, and spinach until tender. Combine with ground turkey, cooked quinoa, and season with Italian seasoning, sea salt, and pepper. Stuff the peppers with the mixture and top with shredded raw cheese on each pepper.
4. Return peppers to the oven, and continue cooking 15 minutes.
5. Enjoy! **Top with slices of avocado and serve with salsa for extra flavor.
