Feeds 2 – 3 people
Ingredients:
- 2 medium sweet potatoes
- 4 – 6 eggs
- 1 small red onion
- 1/2 red pepper
- 2 cups spinach
- 4-6 slices of bacon
- 3 cloves garlic
- 1 avocado
- Feta cheese or raw sharp cheddar to your liking
- Coconut oil
- Grass-fed Butter
- Sea salt, pepper & cayenne to taste
Directions:
Step 1: Cut up the sweet potatoes in small cubes and place on a baking sheet. Massage with coconut oil, sprinkle with sea salt, black pepper, and cayenne & mix together. Place in the oven at 350 degrees to bake for 25 minutes.
Step 2: In a stovetop pan, sauté diced onions & garlic in 1 tbsp. butter. Add spinach once the mixture is cooked through. If you add the spinach first, it will be too wilted and over cooked. While I am prepping the veggie mixture, I simultaneously cook the bacon on another stovetop pan. Chop the cooked bacon and add to the veggie mix once it’s finished.
Step 3: Remove the diced sweet potatoes from the oven and mix into the stovetop pan with the bacon, onion, spinach, red pepper, & garlic (add 1 – 2 tbsp. of coconut oil of the mixture is too dry).
Step 4: Crack 4 eggs into the pan and continue to stir with a spatula until the eggs are thoroughly cooked. Plate the food and top with sliced avocado and a cheese of your choice (I use raw feta or raw sharp cheddar (they sell these at your local farmer’s market or health food store) yumm!
Step 5: Enjoy your home cooked, delicious meal.
