Most of the sweet treat recipes I make like Banana Nut Bites, Chocolate Cashew Milkshake, & Chia Seed Pudding are so simple to make and so delicious that there is no reason to ever buy crappy, processed, junk food ever again.
This, is another one of those recipes. Since the first time I made them Ross keeps asking, “can you make those cookies again?” And then I do, and they are gone within a day.
Made with 4 main ingredients of cashews, walnuts, coconut, and maple syrup and no oven required, there isn’t even a way to mess these babies up.
Let’s get to cookie-making!
What you will need:
½ cup raw cashews
½ cup raw walnuts
1 cup unsweetened shredded coconut
2 tablespoons maple syrup
1 tbsp. flax seeds (ground or whole)
1 tbsp. hemp seeds (optional)
¼ teaspoon sea salt
1 tsp. vanilla extract
Step 1.
Blend cashews and walnuts together in the blender until it becomes completely ground – you may need to scrape the sides down a couple times.
Add remaining ingredients (maple syrup, flax & hemp seeds, sea salt, and vanilla) and blend. The blender doesn’t usually blend it thoroughly so I put it all in a bowl and massage with my hands to make it into a uniform dough.
Step 2.
Roll into 1 tbsp. balls and press down with a fork.
Step 3.
Place in the freezer on parchment paper for a minimum of 1 hour up to overnight to firm up.
