One of my favorite summer snacks is chips and salsa. It’s an easy appetizer when friends come over, a satisfying mid-afternoon snack, wonderful when traveling, and a great addition to any BBQ. This recipe yields an amazing fresh summer salsa that beats out any store bought brand. It is easy to make, and easy to eat!
What better way to use up a variety of those garden vegetables!
How to make the Perfect Summer Salsa
Ingredients
3 cups tomatoes, diced
½ cup green pepper, chopped
½ cup red pepper, chopped
½ cup red onion, chopped
¼ cup jalapeños (seeded and chopped)
¼ cup hot red pepper chopped (optional for heat)
2 tbsp minced garlic
1 tbsp lemon juice
1.5 tbsp red wine vinegar
2 tbsp olive oil
1 tsp black pepper
¼ cup cilantro chopped (or dried)
Directions
1. Dice and chop all vegetables and fresh herbs to your preferred size.
2. In a mixing bowl, stir together all ingredients; adding the red wine vinegar, olive oil and lemon juice last. The more you stir, the juicier the salsa you will produce.
3. Chill for one hour in the refrigerator before serving.
