Austin-Style Avocado

*Similar to our tomato/egg bake but getting crazy with avocado on this one!

Ingredients: 2 large avocadoes, 1 tbsp. coconut oil, sea salt, 4 eggs.

Makes 4 baked avocado halves.

  1. Pre-heat oven to 400 degrees
  2. Slice the avocadoes in half, remove the pit and scoop out about an inch of avocado meat off the top to make room for the egg (Note: Save this for later, you can put it back on top once the egg is baked).
  3. Set the avocado halves in a clear glass baking dish (fill with 1 inch of water so the avocadoes don’t stick).  Place them against one another so they don’t tip over!
  4. Drizzle with coconut oil, sea salt, pepper, chopped garlic + any additional seasonings (I like cayenne!)
  5. Start by cracking 1 egg into a cup and THEN pouring the egg from the cup into the avocado – this helps any spillage that could occur.  Repeat for each egg and avocado half.
  6. Bake for 25-30 minutes until the egg white is hard.

 

*I like to top mine with crumbled bacon but that’s your call! This is always a dish that starts my day off on the right foot.
